Ingredients

  • 3 cups Broth
  • 1 ½ cups brown Rice
  • ½ cup Lemon juice
  • ½ Tbsp. olive Oil
  • 1 ½ cups Corn*, thawed if frozen
  • 1 can black Beans, rinsed and drained
  • 1 Tomato*, red Bell Pepper* & Zucchini, chopped
  • ½ cup green Onions, chopped (optional)
  • 3 cloves Garlic, minced
  • ½ cup fresh Cilantro, chopped
  • ½ Avocado, diced
  • 1 Tsp. black Pepper
  • 1 Tsp. sea Salt

Directions

  1. Bring broth to a boil. Add rice and simmer until liquid absorbs, about 30-40 minutes. Stir occasionally.
  2. In a large bowl, combine all remaining ingredients and add cooked rice. Season and mix well.
