Lemon Lime Pistachio Energy Bites

- 8 pitted dates
- 1 lime (juice + zest)
- 1 lemon (juice & zest)
- Pinch of salt
- 1 cup of roasted or raw unsalted pistachios
- 1/2 cup of shredded unsweetened coconut
- 1 TBSP of coconut oil
- A food processor
- 1 packet of powdered greens (optional but adds a veggie boost!)
- Water as desired
In a bowl of warm water add the 8 dates and allow them to soak for 30 minutes. While waiting, rough chop 1/2 cup of the pistachios and put them in a bowl (this will be used to coat the date balls).
Rough chop 1/4 of the coconut shreds and place them in a separate bowl (this is another option to coat the date balls).
In the food processor add in: – The lemon and lime juice + their zest
– 1/2 cup of pistachios
– 1/4 cup of shredded coconut
– Coconut oil
– Pinch of salt
WHEN THE DATES ARE DONE SOAKING…
Drain them and squeeze each one to take the pit out.
When they are all de-pitted add them to the food processor.
Then: Blend all together until you see that all the ingredients are incorporated (should look like a thick paste). Take a heaping tablespoon amount of the mixture and form it into a ball. Then add it to either the rough chopped pistachios or the shredded coconut. When all of the date balls are formed, place them on a plate and let them set in the fridge until they become more solid (30 min – 1 hour). Store them in a container for about 5 days.
